Sourdough #3

Here is my Sourdough recipe for today.

  • 275g strong bread flour
  • 100g rye flour
  • 250g sourdough starter
  • 7g salt
  • 175ml water

Mix everything together in a mixer then knead until it is smooth.

Place in a large airtight container and leave overnight to prove.

Knock it back and shape. Place in a heavily floured container and allow to reprove for about 6 hours.

Bake for 30 mins at 210 (fan) then a further 15 mins at 190 (fan)
